Edamame salad

Edamame salad
 

-24 oz Frozen edamame 
-1/4 cup Basil leaves chopped 
-1/2 cup Crumbled feta cheese 
-1/3 cup Reduced sugar craisins 
-2 Tbsp Coconut oil or Extra virgin olive oil 
-3 Tbsp Lemon juice 

Directions 
1. Boil a medium pot of water and add frozen edamame. Bring back to a boil and simmer for 5-8 minuets. Drain edamame and transfer to a large bowl to cool down. 
2. When the edamame is cool, mix in the basil, feta cheese, craisins, oil, and lemon juice.
3. Refrigerate for at least 1 hour and enjoy.
